Sweet Potato Pecan Pie

  • Makes: 6-8  
  • Preparation Time: 30 minutes plus baking time 

Ingredients

1 lb454 g yams or sweet potatoes, cooked and peeled

1/4 cup50 ml butter or margarine

1 can300 ml Eagle Brand® Regular or Low Fat sweetened condensed milk

1 tsp5 ml ground cinnamon

1 tsp5 ml grated orange rind

1 tsp5 ml vanilla extract

1/2 tsp2 ml ground nutmeg

1/4 tsp1 ml salt

1 egg

1 (9”/23 cm) graham cracker pie crust

Pecan Topping

1 large egg

2 tbsp30 ml dark corn syrup

2 tbsp30 ml firmly packed brown sugar

1 tbsp15 ml butter, melted

1/2 tsp2 ml maple flavoring

1 cup250 ml chopped nuts

Directions

  1 With mixer, beat hot yams and butter until smooth. Add remaining ingredients except crust and topping; mix well. Pour into crust.

  2 Bake in preheated 425°F (220°C) oven 20 minutes. Meanwhile, prepare Pecan Topping.

  3 Remove pie from oven; reduce oven to 350°F (180°C). Spoon Pecan Topping on pie. Bake 25 minutes longer or until set. Cool. Serve warm or at room temperature.
