Holiday Jewel Fudge

  • Makes: 64 (1") squares  
  • Preparation Time: 20 minutes plus chilling time 

Ingredients

2 cups500 ml white chocolate chips

1 can300 ml Regular Eagle Brand® sweetened condensed milk

1 tsp5 ml vanilla extract

1/2 cup125 ml icing sugar, sifted

1/2 cup125 ml pistachios, toasted and chopped

1/3 cup75 ml chopped dried cranberries

Directions

  1 Melt chocolate chips with Eagle Brand.

  2 Remove from heat, stir in vanilla. Stir in icing sugar and beat 1 minute.

  3 Stir in pistachios and cranberries.

  4 Spread evenly into parchment-lined 8 x 8" (2 L) baking pan. Cover and chill 3 hours. Cut into 1" (2.5 cm) squares.

Tip(s)

Can be refrigerated, covered, for up to 10 days.
