Apple Oatmeal Cinnamon Muffins

  • Makes: About 2 1/2 dozen muffins  
  • Preparation Time: 20 minutes plus baking time 

Ingredients

Dry Ingredients

2 1/2 cups625 ml Robin Hood® All Purpose Flour

1 cup250ml Robin Hood® or Old Mill® Regular or Quick Cooking Oats

1 tbsp15 ml baking powder

2 tsp10 ml ground cinnamon

1 tsp5 ml baking soda

1/2 tsp2 ml salt

1/2 tsp2 ml nutmeg

1/4 tsp1 ml allspice

Wet Ingredients

1 cup250 ml unsalted butter, softened

3/4 cup175 ml packed brown sugar

3/4 cup175 ml white sugar

4 large eggs

1 1/2 tsp7 ml vanilla extract

1 can300 ml Eagle Brand® Regular or Low Fat Sweetened Condensed Milk

1 cup250 ml unsweetened applesauce

1 1/2 cups375 ml coarsely grated peeled apples (from about 3 apples, Golden Delicious or Cortland work best)

Directions

  1 In large bowl, stir all dry ingredients together; set aside.

  2 With electric mixer on medium speed, cream butter and both sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla, sweetened condensed milk and applesauce.

  3 Reduce speed to low, and slowly add dry ingredients mixing just until smooth. Gently fold in apples.

  4 Pour batter into greased, non stick or paper lined muffin cups. Bake in preheated 325°F/160°C oven until center of muffins bounce back when lightly touched, about 16-20 minutes. Remove muffins from pan and cool on wire rack.
